just ribbin' you

The recipe card says "Dad's Short Ribs". By dad, I mean my much loved ex-father-in-law, who I miss very much. this is a recipe he taught me. We used to make it with moose ribs, but this year I am making it with beef from the farm next door.

The 50 mile diet is an important part of our daily life, not just once a year. You can just call me a practicing localvore.

Dad's Short Ribs


3 lbs short ribs
1 Tbsp fat (I use saved bacon fat)
1/4 cup HP sauce (recipe to follow)
1 pint jar tomato sauce
2 Tbsp corn starch
2 Tbsp vinegar
2 Tbsp mustard
salt & pepper
1 cup water
1 clove sliced garlic
1 sliced onion  (this year we have a ton of shallots so I used 4)
2 sticks celery, chopped (these are fabulous this year, or you can use lovage)
carrots & potatoes (usually! this time I used Russian Blue Potatoes and no carrots)

Coat short ribs with HP sauce. In oven-proof dutch oven with cover, brown meat in fat. Mix sauce ingredients with garlic, onion and celery. Pour over meat and bake covered at 350F for 1 hour.
Stir a little. Add potatoes & carrots. Cover and bake at 400F for another hour.
Serve with a salad fresh from the garden!
