love my kale

the first sign of spring is not the snow-drops and crocuses... it is the kale! Although this frosty weather has given my winter garden quite a beating, some of the varieties of kale survived.

Wine-Steamed Kale

1 Tbsp olive oil
4 cloves garlic, chopped coarsely
sprinkle of salt
2 - 3 cups chopped fresh kale
1/4 cup dry white wine

Heat oil in saute pan (that happens to have a lid) over medium fire.
Add chopped garlic & a little salt. Saute until the garlic is starting to turn brown and smells heavenly. Drop in the kale and stir to coat with oil. Pour the white wine over and cover. Steam until tender. Just a few minutes.
