applesauce cake

the first apples of the season are the "transparent" apples. we dry them, sauce them, crisp them... and now, we cake them! looks like we need a second transparent apple tree :)

2 egg whites
1 medium egg
2 cups applesauce
2 cups sugar
1 tsp xanthum gum
1 tsp baking soda
1 cup mixture of Gluten free flours like coconut, rice or sorghum
1 cup mixture of Gluten free starches like potato, tapioca or corn
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 tsp Gluten free Baking Powder
1 cup raisins
1 cup toasted, chopped walnuts
1/2 cup vegetable oil (we used rice bran oil)

Preheat the oven to 350 F.
Line a 9" x 13" pan with parchment paper.
In a big mixing bowl, beat the egg whites and egg until well blended. Add applesauce, sugar, xanthum gum and soda and stir gently.
In a second bowl, sift together the remaining dry ingredients several times to add air into the flour. Blend the dry ingredients into the applesauce and sugar mixture in small amounts.
With the last addition of dry ingredients add the raisins and nuts. Finally, blend in the vegetable oil.
Bake for 60 minutes, or until a toothpick inserted in the centre comes out clean.
