Baked Summer Harvest1 large sweet onion cut in half and sliced thinly
3 pattypan squash, cut in 8 wedges (you can use sliced little zucchini)
2 -3 tomatoes cut in 8 wedges
salt & pepper
1/2 cup basil rolled and cut in thin strips
1/2 cup shredded soy mozza cheese
Head the oven to 375F.
Soft saute the onion in a little butter until limp. Set aside.
Butter a large (9x13) baking dish. spread out the wedges of tomato & squash. Sprinkle with salt and pepper. Spread the cooked onion over the top. Sprinkle with the basil strips. Top with the cheese.
Bake in 375F oven for 15 - 20 minutes.
