use the best ingredients you can afford, alter them as little as possible and everyone will think you are a wonderful cook.
beef, mushrooms & kale
1 pound ground beef (we are fortunate to have a neighbour who raises beef!)
1" cube of ginger, finely diced
2 tbsp olive oil
1 cup oyster mushrooms, sliced (pick in the spring and saute before freezing in bags!)
4 cups shredded kale
3 Tbsp thai basil, shredded
Heat the pan and add olive oil. Gently fry the ginger for a couple minutes to cook it down & scent the oil. Add the beef and saute, crumbling it into little bits. Stir in the mushrooms, then shredded kale. Cover and cook a few minutes. Add basil and cook until wilted. Served this with some rice & whatever veggies we could find in the garden that day.
It was fantastic!
