apple crisp with cranberries


Apple crisp with benefits

my friend from work brought me some fresh cranberries from the Fraser Valley where her son works. They were fabulous in this recipe.

base:
8 Cox Orange Pippen apples - or any tart cooking apple, peeled, cored and thinly sliced
2 tsp lemon juice (for sprinkling on apples)
1 cup fresh or frozen cranberries
1/4 cup white sugar
1/4 cup brown sugar
1/4 cup GF flour
topping:
2/3 cup quinoa flakes1/2 cup GF flour mix
1/4 cup packed demerrara sugar
1/4 cup white sugar
2 tsp cinnamon
1/3 cup cold butter, cut into pieces
1/2 cup sliced almonds

Preheat oven to 375 F. Grease an 8 inch square baking dish.

 In a large bowl, mix together apples, lemon juice, cranberries, sugar & GF flour.

Place evenly into baking dish. In the same bowl, combine quinoa flakes, GF flour mix, sugars & spice. With a fork or pastry knife, mix in butter until crumbly. Stir in almond slices. Sprinkle over apple mixture.

Bake in preheated oven for 40 to 50 minutes, or until topping is golden brown, and apples are tender.

** Note that you can use just about any fruit combination and this will still taste like heaven. I have done rhubarb (with a bit more sugar); blackberries with apple; peaches; and so on. Enjoy!
