Garlic Pesto Crusted Salmon (or Chicken)

5 or 6 garlic scapes, chopped
1 cup pesto
1 cup GF breadcrumbs
1/4 cup soy parmesan cheese
3 Tbsp olive oil

blend all the ingredients.

For salmon, spread about 1/8 inch thick on salmon fillets. Sear the fillets pesto-side-down in an oven-safe frying pan in a little olive oil. Flip and cook in 400F oven for about 5 or 6 minutes.

For chicken, spread over chicken pieces and arrange in shallow roasting tray. Bake at 375 for 40 - 50 minutes (depending upon the size of the chicken pieces)
