the basics: gluten free flour mix

This is my favourite way to use the gluten-free starches and flours together for every day baking, especially heartier buns or fruity cakes. It has a mix of approximately equal parts starches and flours, with some added for fiber and others for flavour.

everything but the kitchen sink flour mix

2 cups white rice flour
2 cups brown rice flour
6 cups light buckwheat flour
1 cup sorghum flour
1 cup millet flour
1/2 cup coconut flour
3 cups potato starch
1/4 cup potato flour
3 cups tapioca starch
1/2 cup flax seed meal

Sift together all the starches and flours and add flax meal. Stir and store in tightly sealed container. If I didn't use this up so quickly, I would store it in the fridge or freezer.
