amazing that these are gluten-free and milk-free .... but unfortunately, not fat free!
6 large sweet onions, sliced
1 cup butter
2 teaspoons potato flour
2 teaspoons salt
1/2 teaspoon white pepper
2 cups soymilk
In a large flat pot or pan, saute onions in butter about 1/2 hour. They should be starting to turn a beautiful golden colour. Remove onions with a slotted spoon. Add potato flour, salt and pepper and stir until smooth and starting to brown a bit. Gradually stir in soy milk and reheat just to a boil. Cook until thick, stirring frequently. Return onions to the pan to reheat.
This is delicious as a sauce or gravy substitute.
