Caramelized Shallots with Veggies

all that hard work all summer is paying off with a freezer and pantry full of the vegetables and fruits we grew. Here is a perfect recipe for a bit of this and that.

Caramelized Shallots with Veggies

large handful of shallots, peeled & coarsely chopped
at least 1 garlic clove, chopped
1 tsp butter
1 tsp olive oil
1 cup frozen broad beans, defrosted (I peeled the tough outer skins off)
1 cup frozen green beans or edible pod peas, defrosted and cut in chunks
1 cup frozen carrots chunks, defrosted
1/4 cup grated Parmesan (or soy Parmesan) cheese
    Warm butter & olive oil in pan. Saute shallots & garlic over low heat until they are sweet and golden brown, about 20 minutes. Add defrosted assorted veggies and heat together.
    Sprinkle with cheese and broil for a few minutes to melt the cheese.
    This recipe is amazingly delicious!
