Heaven is finding a pizza crust recipe that tastes like pizza crust!
2 cups rice flour
1/2 cup corn flour
1 1/2 cups GF flour mix
2/3 cup soy milk powder
rounded Tbsp xanthan gum
1 tsp salt
2 tsp oregano
2 Tbsp instant dry yeast
1 Tbsp sugar
1 1/2 cup very hot water
3 Tbsp shortening
3 eggs, stirred
In the big bowl of your heavy mixer put all the dry ingredients. Mix and then add the hot water & shortening. Mix well. Add the eggs & mix again. Beat for about 5 minutes.
Divide the pizza dough into three balls and place on greased pizza sheets. Cover with plastic wrap and roll out toward the edges of the pan until it is quite thin, leaving a raised edge. Remove the plastic wrap & let rise 10 - 15 minutes until puffy. Meanwhile, preheat the over to 400F.
Bake the empty crusts for about 8 - 10 minutes. Remove and add tomato sauce and toppings. Return to oven and bake until the bottom is browned and cheese is melted, about 20 minutes.
