butternut squash

our squash are storing really well, but I start to get worried around now that we won't finish them before we lose many more... and then Will discovered this amazing recipe! Also included is this great way to peel the beasties

Baked Butternut Squash with Apple

1 butternut squash, about 1-1/2 pounds, washed well
1 tablespoon butter, melted
1 tablespoon curry powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon salt
pepper to taste
2 apples, cored, chopped into half-inch pieces
2 tablespoons maple syrup
1 tablespoon balsamic vinegar

Preheat oven to 375F. Place washed squash in oven for a few minutes to warm as you preheat. (easier to cut!) Rinse with cool water to chill before starting to chop. Remove the skin, seeds and membrane, then cut into half-inch cubes. In a large bowl toss the squash with butter, spices, salt and pepper. Transfer to baking dish. Cover with foil and bake for 20 minutes.
Combine apples, maple syrup and balsamic vinegar. Arrange apples over the squash. Re-cover with foil, bake for another 10 minutes.
Uncover the dish, stir and bake for about another 30 minutes, stirring every 10 minutes, until the squash is fully cooked. Share the recipe! this is amazing
