new favourite soup

Our neighbourhood includes an organic farm, Hatch-A-Bird Farm, where they raise chickens, pigs, cattle and vegetables! we were fortunate enough to have purchased a quarter of a pig last year, and smoked the hams, bacon & feet! The fat was all rendered into lard and we have really enjoyed this treat.
9 cups water
1 1/2 cups dried French green lentils
2 or 3 sliced carrots
1 or 2 stocks celery, chopped
1 cup shallots, chopped
2 teaspoons salt
1 teaspoon sugar
1/4 teaspoon pepper
1 bay leaf
In a stock pot or large kettle, combine pork and water. Simmer 1 1/2 hours, then add lentils, carrots, celery, shallots, salt, sugar, pepper and bay leaf. Cover and bring to a boil; reduce heat and simmer for about 1 hour, or until lentils are tender.
Take out ham bone or pig's foot and remove meat. Chop meat and return to lentil soup. Remove bay leaf.
