GF flour mix

This is my new favourite mix for taste and nutrition in breads, loaves, pancakes and cookies.

sift together:
2 cups brown rice flour
2 cups white rice flour
6 cups buckwheat flour
3 cups tapioca flour
3 cups potato starch (NOT potato flour)
1 cup sorghum flour
1 cups millet flour
1/2 cup coconut flour
1/2 cup finely ground flax meal
1/4 cup potato flour

Seal in a container and use over the next couple weeks, or refrigerate. Bring to room temperature before using in your baking.
