all the fruit gf muffins

I love the little square brownie pans for making muffins. They are so cute! This recipe was created and tested because sometimes, you just want something different. 

This recipe makes about 16 muffins. (My board games group gives this recipe 8 thumbs up!)


 

Blueberry Banana Apple and Raspberry GF Muffins with Yogurt

  • 2 soft bananas
  • 1/2 cup apple sauce
  • 1/3 cup melted butter
  • 1 cup sugar 
  • 1/2 cup greek yogurt
  • 1 tsp vanilla
  • 1 egg, beaten
  • 1 1/2 cup GF flour
  • 1/2 cup almond flour
  • 1/4 cup flax meal
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/3 cup fresh or frozen blueberries, raspberries and/or cranberries
  • a little raw sugar crystals for sprinkling on top 

Preheat the oven to 350F. I like to use parchment paper liners in the muffin pans to make them easier to serve.

In a small bowl mix the flours, flax meal, baking soda and salt. set aside. 

Mash the banana with the apple sauce, and add in order: melted butter, sugar, yogurt, vanilla and egg, stirring after each. Add the dry ingredients, stirring until well mixed. Stir in the fruit. 

Scoop into prepared muffin pans, sprinkle on a little raw sugar and put the pans in the middle of a preheated 350F oven.  If you divided the batter into 16 muffins, they will take about 1/2 hour to cook. If you crammed it into 12 huge muffins, I found it will take at least 10 minutes longer. You can check to make sure they are cooked by inserting an instant read thermometer and checking that they are between 200 - 205 F.
