tofu stir fry for my mom
My mom is 93 and still loves to make her own meals, but on a much smaller scale than when she was cooking for six kids! She'd love to cook more tofu but just can't find a recipe that is simple and tasty, uses gluten-free ingredients and is easy to re-heat!
This is one my sweetie made up for us and we just love it.
First thing is to start your rice or quinoa to have with this dish, then gather these ingredients:
- 1 package extra-firm tofu cut into bite sized pieces
- 3 Tbsp corn starch
- 1/2 tsp five spice
- salt & pepper to taste
- 2-3 Tbsp olive oil
- 1 tsp chopped ginger
- 1 chopped garlic clove
- Assorted veggies cut for stir frying (you can use that frozen mix you love)
- 1/2 cup mango juice
- 1 Tbsp gluten free soy sauce
- 1 tsp sesame oil
- 1 Tbsp brown sugar or maple syrup
- 1 tsp cornstarch
Make sure you drain the tofu well, and pat it dry a bit. Mix the cornstarch, Chinese Five Spice, salt and pepper in a small bowl. Dredge the tofu chunks in the cornstarch mix and place on a piece of parchment paper as you go. When they are all done, warm up a frying pan with a couple tablespoons of oil over medium heat. Toss in about half the tofu chunks and saute until crispy, set aside. Saute the rest of the tofu and set aside as well. (this adds a little coating of oil to the cubes as well so they crisp up nicely)
Mix up the stir fry sauce now so it's ready to go :-) In a cup, mix juice, soy sauce, sesame oil, sugar and cornstarch.
Add a bit more oil to the pan, Add the ginger & garlic and the veggies and stir until well heated and cooked to your liking. Add the mango juice sauce. Cook until the sauce thickens up a bit.
Toss in the crispy tofu. Stir to coat.
Serve over brown rice, or quinoa.
