creamy cucumber salad

 This summer was perfect weather for the English cucumbers in my green house. During the height of the season I was picking four or five cucumbers a day from just four plants! I love cucumber salads and this new one is a family favourite.

1/2 cup sour cream

1 tablespoon white wine vinegar
2 tablespoons basil shredded (or it's great with dill!)
2 tablespoons parsley chopped
1 large English cucumber - thinly sliced
1/2 teaspoon salt
1/2 teaspoon black pepper - freshly ground

Slice the cucumbers as thinly as you can. I use a mandolin, and set the thickness at 1/8 inch. 

Mix the sour cream, vinegar, and herbs together. Pour over thinly sliced cucumbers. Toss. Add salt & pepper.
